Archiving tape

My day job is at a 90 year old institute, with some audio archives. A couple of companies are offering to digitise the archive, which is mostly text, and include the tapes of meeting recordings. There's a way to go yet but we expect them to make mp3s available, and then wavs or flags or the like for preservation. What do you think about how these files are stored?
